Simple, low carb and healthy!
Spaghetti squash is of the winter squash variety, even though it is ready to harvest in early autumn. After you cook this hard-shelled squash, the inside produces long strands that resemble spaghetti noodles when scraped with a fork- and as you’ve probably guessed, that’s how it got its name.
This nutrient-dense squash is small but mighty packing a ton of benefits for our bodies. It’s also extremely delicious, which coming from this traditionally carbitarian- that says a lot. Spaghetti squash is a good source of fiber, vitamin C, manganese, potassium, and vitamin B6. Vitamin C boosts immunity, B6 helps our bodies absorb B12, and potassium helps balance electrolyte levels in our body which is super important for regulating your heartbeat and preventing muscles from cramping. I personally prepare this recipe with a meat sauce, but feel free to substitute it with any meat or vegetarian option.

Ingredients:
- 1 spaghetti squash
- 1 lbs ground beef (sub for plant-based ground beef or tofu)
- Olive oil
- Salt & Pepper
- 1 jar tomato pasta sauce
- Parmesan cheese
Instructions:
Spaghetti Squash:
- Preheat oven to 400F
- Carefully cut spaghetti squash in half (stem to bottom)
- Scoop out seeds from each half
- Coat inside spaghetti squash with about 1 tbsp of olive oil, salt and pepper
- Place squash on baking sheet, inside facing up, and bake 40 minutes at 400F
- After spaghetti squash has cooked for 40 minutes, remove from oven and let it cool for 5-10 minutes
Meat Sauce:
While your squash is cooking, start making your meat sauce:
- Add olive oil to the pan and thoroughly cook ground beef
- Once ground beef is cooked, reduce to a simmer and add one jar of your favorite tomato pasta sauce
Serve:
Lightly scrape the center of the squash with a fork to create the stringy spaghetti noodles, and add the meat sauce. Don’t forget to top off your creation with parmesan cheese. Bon appetite!
